Dr. Flemmie Pansy Kittrell, an African American woman, earned a Ph.D. in nutrition in 1938. Her research focused on the nutritional requirements of adults and children. She was especially concerned with improving nutrition among low income families around the world.
 
Proteins are essential to all life and are important in cell metabolism and muscle contraction. In this classroom experiment, students will perform a simple test on many foods to see if they contain proteins. Materials are provided for 24 students, 4 per work station.
 
Materials included: 
  • Biography sheet for Flemmie Pansy Kittrell
  • 25 pairs of plastic gloves
  • 4-30 ml biuret solution bottles
  • 100 disposable beral pipets
  • 50  plastic test tubes with caps
  • 6 plastic 6-place test tube racks
  • 6-10 ml graduated cylinders
  • 12 stirring rods
Other materials you need for this classroom experiment:
  • a variety of assorted common foods
  • 25 pairs of safety goggles
  NOTE: Close supervision of students is absolutely necessary. Safety goggles are recommended, but not provided. They are available from the onlinesciencemall catalog.  This classroom kit is suitable for grades 7-12.
